This recipe is easy to make and is packed with protein, making it a great healthy sweet treat for adults or kids. When chia seeds are soaked in liquid they absorb the liquid, making the consistency a bit like a rice pudding or tapioca. Chia are high in dietary fibre, omega 3 essential fatty acids, vitamin C, potassium, iron, calcium, antioxidants and contain all the essential amino acids.
Ingredients – serves 4
1/2 cup of almonds
3 bananas
2 cups filtered or spring water
1 tablespoon pure maple syrup
1/2 teaspoon vanilla essence
1/4 cup chia seeds
Cacao nibs.
Directions
Add two of the bananas, the almonds, water, maple syrup and vanilla essence to a blender and process until smooth. In a high speed blender like a Vitamix this will only take about 10 seconds. Place the mixture into a bowl, add the chia seeds and stir in consistently. Place the bowl in the fridge for an hour to allow the chia seeds to absorb the liquid and then give the pudding another stir.
Arrange the chia pudding with layers of banana in-between and sprinkle cacao nibs on top.
To make the recipe nut free replace the water and almonds with coconut milk. If you can’t find cacao nibs you can use dark chocolate chips in their place.
