Gooey, chocolatey fudgy love! With a treat so delicious it’s hard to imagine it’s packed with ingredients like cashew nuts, cacao, vanilla & coconut. They are sweet and rich so I like to cut them into bite size pieces to enjoy after a meal.
Raw Chocolate Coconut Fudge
Ingredients
Cashew fudge layer:
- 1 cup cashew nuts
- 1 tsp water
- 3 tbsp coconut oil
- 1/4 cup maple syrup (or a similar sweetener)
Chocolate coconut layer:
- 1 cup cashew nuts
- 1 tbsp water
- 1/4 cup rice malt/maple syrup
- 1 vanilla bean seed scraped
- 2 tbsp cacao powder
- 2 tbsp shredded coconut
Directions:
- Line a small square baking tray or baking dish with baking paper greased with a little coconut oil
- Add the cashew fudge layer ingredients to a blender & blend till almost smooth
- Spread the ingredients onto the dish and place in freezer for an hour to harden
- Add the chocolate coconut layer ingredients to a blender & blend until almost smooth, (I blend the cashews, water, syrup & vanilla bean first and then add the cacao & coconut)
- Spread the mixture on top of the cashew fudge layer and place into the freezer for 2 more hours
- Remove the fudge from the dish and cut into small bite size pieces and enjoy straight away
- Store any leftovers in the freezer.
