We had a super hot day today in Sydney & a beautiful swim in the ocean so I was very happy to come home to these Mango & Lime sorbets which I prepared this morning. I served them with some fresh pomegranate and basil, but mint and passionfruit would also work well. These sorbets are simply delicious. We had to photograph them very quickly as they were melting!
The sorbets are gluten, dairy & refined sugar free.
Sorbet ingredients – serves 4
3 ripe mangos, peeled and chopped
Juice of 1 lime
1 cup of coconut water
2 tablespoons of rice malt syrup
To serve
Fresh pomegranate or passion fruit
Fresh mint or basil
Directions
Place all the sorbet ingredients in a blender and blend for a few seconds until smooth. Pour the mixture into a container and place in the freezer. After an hour remove from the freezer and roughly stir the mixture. Repeat this twice more every hour and then freeze for about four more hours until it’s firm or the consistency you desire.
Top with fresh fruit of your choice and perhaps some delicious fresh herbs. Enjoy!
