My husband loves fruit cake so asked me to make a healthier version and he loves this one. You can make it a boozy fruit cake by adding orange liquor or for an alcohol free version use extra freshly squeezed orange juice. Either way, it’s delicious and far lower in sugar than your average fruit cake.
Dry Ingredients
- 1 cup buckwheat flour
- 1/4 cup oat flour
- 1/2 cup coconut flour
- 1/2 tsp bicarbonate of soda
- 2 tsp cinnamon
- 1 tsp nutmeg
- zest of one orange
- 3/4 cup chopped walnuts
Wet ingredients
- 1/4 cup coconut oil melted (or butter)
- 1 tsp vanilla extract
- Juice of one orange
- 5 organic free range eggs (or 5 flaxseed eggs)
- 60mls of orange liquor (or use the equivalent orange juice)
- 1 cup blueberries
- 1 cup sultanas (soaked for 15 minutes in boiled water)
Directions
- Heat the oven to 150C fan based
- Mix the dry ingredients in a bowl until evenly combined
- In a separate bowl mix the wet ingredients until evenly combined
- Make a hole in the middle of the dry ingredients bowl and gradually add the wet mixture stirring until evenly combined.
- Once the mixture is evenly combined add to a round cake baking dish lined with baking paper.
- Bake for 60 minutes. If using the glaze add it straight away.
Glaze
- 2 tbsp maple syrup (or similar sweetener)
- 2 tbsp orange liquor
- Heat the glaze in a pan to soften the maple syrup and then pour straight over the cake.
