Ingredients (makes 12 cookies)
1 cup ground almonds
¼ cup coconut oil
1 teaspoon vanilla essence
1 & a ½ tablespoons maple syrup
½ teaspoon baking powder
¼ cup macadamias halves (plus extra for decorating)
¼ cup chopped figs* (plus extra for decorating)
*Choose dried figs with no added sugar, sulphites, additives or preservatives.
Directions
Preheat the oven to 160c.
I like to blend my almonds fresh in a blender but you can also buy almond meal ready prepared. Mix the ground almonds, coconut oil, vanilla essence, maple syrup and baking powder in a bowl until the mix is consistently blended. Then add in the macadamia halves and dried figs and mix them in.
Line a baking tray with baking parchment (paper) and use a teaspoon to spoon the mix into 12 balls. Shape the balls into round cookie shapes and use the extra macadamias & figs to decorate the top of the cookies.
Bake for around 15 minutes. The cookies will feel quite soft when they come out of the oven. Leave them to cool for a little while and then enjoy!
