Felt in need of an energy boost today so I threw together these superfood protein balls. They were very simple to make & have a lovely chocolatey coconut flavour.
Ingredients – makes 8 balls
- 1/2 cup hemp protein powder (could use brown rice or pea protein)
- 1/4 cup desiccated coconut
- 1/4 cup coconut crunch (if you don’t have this you could use another 1/4 cup desiccated coconut)
- 2 tbsp acai
- 2 tbsp raw cacao powder
- 2 tbsp chia seeds
- 3 tbsp coconut oil
- 3 tbsp rice malt syrup (could use pure maple syrup)
I mixed all the ingredients in a bowl until combined and then rolled them into balls and covered half in more desiccated coconut. They can be eaten straight away or placed in the fridge for 30 minutes depending on how you like the texture. They can be stored in the fridge. Enjoy!
