These muffins are so delicious my husband and I had to go back for seconds when I made them on the weekend. They are super easy to throw together and are vegetarian, gluten & dairy free.
Ingredients (makes 8 muffins)
2 cups almond meal
1/2 tsp baking powder
1/4 cup cacao
3 tbsp coconut oil
3 tbsp coconut sugar
2 ripe bananas
1 cup raspberries
2 organic eggs
Directions
Pre-heat the oven to 170c. Leaving the raspberries till last, place all the ingredients in a bowl and mix them all together (you will need to mash the banana into the mixture). Add the raspberries last and mix them in consistently.
When making muffins I use a heaped tablespoon to measure the mixture into the liners as this amount tends to work well. Separate the mixture into 8 muffin liners & bake in the oven for around 30 minutes.
