Haloumi & Nectarine Salad with Garlic, Parsley & Mint Dressing (serves 4)
The real bite from this salad comes form the mint & garlic which work beautifully with the flavours of haloumi & nectarine. Perfect for a summer lunch or half portions could be served as a starter for dinner.
Dressing:
1/4 cup fresh parsley,
1/4 cup fresh mint,
1/4 cup olive oil,
1 clove of garlic,
Juice of 1/2 a lemon.
Salad:
250g of haloumi, grilled or pan fried,
2 large or 4 small nectarines chopped into small chunks,
1 large zucchini, grated,
4 large handfuls of mixed spinach & rocket.
Directions:
Pop all the dressing ingredients into a blender and blend for a few seconds. Be careful not to over blend as you still want to see small chunks of the herbs for the presentation.
Assemble the salad onto four plats and drizzle the dressing over the cheese and around the plate.
Sit back and enjoy the taste of summertime!

I made this with perfectly ripe white nectarines and served it with grilled salmon, avocado & roasted pecans. It was stupendous. That dressing is so good.
