Nachos with Lentil and Kidney Bean Chilli, Lime and Coriander Guacamole with Nocheese Sauce. These Nachos were a massive hit with all our family. The chilli made enough for two meals so we enjoy these Nachos one day and will have the chilli with cauliflower rice and avocado tomorrow. Initially I didn’t serve these to my 15 month old as I didn’t think she would like them, but she was so keen to try them when she saw us eating them, I gave her a few of the softer Nachos from underneath with some guacamole on and she really enjoyed them!
Chilli Ingredients (serves 6)
- Extra virgin olive oil
- 1 red onion, chopped
- 1 red pepper, chopped
- 1/2 teaspoon chilli powder (or more if you prefer it hotter)
- 1/2 teaspoon of paprika
- 1 teaspoon of oregano
- 2 tins chopped tomatoes
- 1 tin kidney beans (drained and rinsed well)
- 1 500g jar of lentils (drained and rinsed well)
- 1/2 vegetable stock cube
- Water (about 1/4 cup to taste and get the consistency right)
- Salt and pepper to taste
- Fresh coriander to serve
Method
- Add the olive oil to a pan over a medium heat and add the chopped red onion and allow it to sauté for a few minutes before adding the red pepper and saute for another few minutes.
- Add the herbs and spices and stir through for a minute to allow the aromas to emerge.
- Once the onion and pepper have softened add the tinned tomatoes and allow the mixture to simmer for around 10 minutes, before adding the kidney beans and lentils.
- Sprinkle through the vegetable stock and add the water, salt and pepper. All the mixture to simmer for another 5 minutes and then taste to see if you need to add any extra herbs or spices for flavour.
Lime & Coriander Guacamole
Ingredients
- 1 cup chopped avocado
- Juice of 1 lime
- 2 tbsp of freshly chopped coriander
- About 8 cherry tomatoes, sliced
Method
- Mash the avocado, then add the lime and mash through.
- Next mix through the chopped cherry tomatoes before mixing through the coriander.
NoCheese Sauce
Ingredients
- 1 cup cashew nuts (soaked for 15 mins)
- 1/4 cup nutritional yeast flakes
- 30mls lemon juice (about 1/2 lemon)
- 2 cups of water
- 1/4 teaspoon paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- Salt and pepper to taste
- If you like a spicy chilli sauce add a dash of garlic chilli sauce
Method
Add all the ingredients to a high speed blender and blend until smooth.
Assemble all Nachos on a plate, add the chilli first, then the avocado and then pour of the cheese sauce and add some freshly chopped Coriander. Enjoy!
