This is one of our favourite, go to, 15 minute recipes. It is so tasty it will always leave you feeling satisfied and it’s packed with nutrients. The addition of shirataki noodles makes the dish low carb. Shirataki noodles are made from konjac yam (a water soluble dietary fibre) and water and are very low in carbohydrates (we’re talking around 2g net carbs in a serving) and yet give you the satisfaction of eating noodles.
Of course, there is nothing wrong with adding noodles of your choice, buckwheat noodles or brown rice noodles would also work well with this recipe. But if you are looking for a light meal Shiratake noodles work really well. It’s unlikely you will find them in a supermarket, so look in a health food store or they are easy to find and very reasonable online.
Low Carb Pad Thai with Shirataki Noodles
Ingredients (serves 2)
- 1 packet of shiratki noodles
- 3 tbsp tamari sauce (or soy sauce)
- 2 tablespoons erythritol (or another sweetener like maple syrup)
- 1/4 teaspoon of dried chilli
- Juice of 1 & 1/2 limes
- 1-2 tbsp coconut oil or extra virgin olive oil for cooking
- 4 garlic cloves, diced
- 3 cups chopped veggies of your choice, we like to use broccoli, red pepper and carrots
- 50g bean sprouts
To serve
- Fresh basil
- Fresh coriander
- Lime wedges
- Chopped almonds (can also use peanuts)
- 3 green onions thinly sliced.
We like it as is but as an option you can add another protein of your choice (e.g. tofu, egg, prawns).
Method
- Heat the oil in a pan and add the garlic, tamari (or soy sauce), erythritol (or other sweetener), chilli and lime juice.
- Add the chopped veggies to the pan and saute for around 10 minutes, stirring regularly.
- Add the bean sprouts and cook for 1-2 more minutes.
- Follow the packet instructions for the shirataki noodles. We rinse them in cold water and then add them to a pan of boiled water for 2 minutes before they are ready to use.
- Add the noodles to a plate and add the veggies and sauce on top.
- To serve add the herbs, chopped nuts and spring onion and serve with lime wedges on the side.
