Zesty Carrot Cakes with Cashew Coconut Cream. These were given the thumbs up from husband and my little on today. I added lemon zest to the carrot cakes to add extra vitamin C and you can also add it to the topping. My husband loves fruit cake so asked me to make a healthier version and he loves this one. You can make it a boozy fruit cake by adding orange liquor or for an alcohol free version use extra freshly squeezed orange juice. Either way, it’s delicious and far lower in sugar than your average fruit cake. (more…)
