Raw Cashew Chocolate Coconut Fudge

At Natural Health Forever we advocate the 80/20 rule, where you eat 80% of food for the health of your body and 20% for your soul.  Plan your meals a week in advance & put some time aside on a Sunday to prepare food so that you have natural based delicious treats on hand when you want them. Make sure your treats are based on whole food principles and either make them yourself or check labels for additives & nasties you don’t want. As a general rule if you don’t understand an ingredient on a label, your body won’t either.

And always remember these basic rules:

  • If you keep good food in your kitchen, you will eat good food.
  • If you fail to plan, then plan to fail.

Here is a simply delicious treat to enjoy as part of your 20% soul food :-)

Raw Cashew Chocolate Coconut Fudge 

Ingredients

Cashew fudge layer:

  • 1 cup cashew nuts
  • 1 tsp water
  • 3 tbsp coconut oil
  • 1/4 cup rice malt/pure maple syrup

Chocolate coconut layer:

  • 1 cup cashew nuts
  • 1 tbsp water
  • 1/4 cup rice malt/maple syrup
  • 1 vanilla bean seed scraped
  • 2 tbsp cacao powder
  • 2 tbsp shredded coconut

 Directions:

  1. Line a small square baking tray or baking dish with baking paper greased with a little coconut oil
  2. Add the cashew fudge ingredients to a blender & blend till almost smooth
  3. Spread the ingredients onto the dish and place in freezer for an hour to harden
  4. Add the chocolate coconut layer ingredients to a blender & blend until almost smooth, (I blend the cashews, water, syrup & vanilla beans first and then add the cacao & coconut)
  5. Spread the mixture on top of the cashew fudge layer and place into the freezer for 2 more hours
  6. Remove the fudge from the dish and cut into small bite size pieces and enjoy straight away
  7. Store any leftovers in the freezer.
