Raw roots & nutty mayonnaise

Body in need of a cleanse? Try this raw root and nutty mayonnaise salad. The beetroot supports the liver in its detoxification process and the raw carrot and sweet potato sweep through the gastrointestinal system giving it a good cleanse. Orange veg are high in Vitamin A, the kale and parsley add heaps of vitamins and minerals and the nuts and seeds add protein. Here is now I made mine (serves 2).

Salad ingredients: 1/2 sweet potato (peeled and grated), 1 large beetroot (peeled and chopped), 2 carrots (chopped), 5 leaves of kale (chopped), a sprinkling of pine nuts and pumpkin seeds and a sprinkling of chopped parsley.

For the dressing: in a blender add 1 tablespoon of tahini, 1 tablespoon of cashew nuts, 1 tablespoon of olive oil, 1 teaspoon of apple cider vinegar, 2 cloves of garlic and 3-4 tablespoons of filtered water (depending on how runny you want the dressing) and blend until it is the consistency you want it. I like mine with the nuts still a little bit crunchy. Put the nutty mayonnaise in the bowl and mix in some finely chopped parsley.

Assemble your salad ingredients in two bowls and add a dollop of nutty mayonnaise on each.  Mix the mayonnaise through the salad and feel the goodness it’s giving your body as you eat it! Enjoy!
